Cranberry, Apple, Sausage Stuffing

Ingredients:

  • 1-1-2 cups whole wheat bread, cubed
  • 3-3-4 cups white bread, cubed
  • 1 lb. ground turkey sausage
  • 1 cup yellow onion, chopped
  • 3/4 cup celery, chopped
  • 2-1-2 tsp. dried sage
  • 1-1-2 tsp. dried rosemary
  • 1/2 tsp. dried thyme
  • 1 Golden Delicious apple, cored and chopped
  • 3/4 cup dried cranberries
  • 1/3 cup minced fresh parsley
  • 3/4 cup turkey stock
  • 4 tbsp. unsalted butter, melted

Directions:

  1. In a medium-sized saucepan over medium heat, dissolve the sugar in the orange juice.
  2. Stir in the cranberries and cook until the cranberries start to pop, about 10 minutes.
  3. Remove from heat and place sauce in a bowl. Cranberry sauce will thicken as it cools.
  4. Mix in chopped apple, dried cranberries, parsley, and liver. Drizzle with turkey stock and melted butter, and mix lightly.
  5. Allow stuffing to cool completely before loosely stuffing a turkey.
