Mac & Cheese

Ingredients:

  • 16 oz. pasta
  • 3 tbsp. unsalted butter
  • 1 small yellow onion, finely chopped
  • 3 tbsp. all-purpose flour
  • 1/2 tsp. kosher salt
  • 1/4 tsp. pepper
  • 2-1/2 cups milk
  • 2 cups Gouda cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Swiss cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp. butter, melted
  • 1/2 cup panko

Directions:

  • 1Preheat broiler.
  • 2Coat a -quart broiler-safe baking dish with cooking spray and set aside.*
  • 3Bring a large pot of lightly salted water to boiling. Add pasta and cook according to package directions. Drain and return to the warm pot.
  • 4Meanwhile, in a large saucepan, melt 3 tablespoons butter over medium heat.
  • 5Add onion, then cook and stir for 3 minutes.
  • 6Stir in flour, kosher salt, and pepper, then add milk all at once.
  • 7Cook, whisking constantly, until thickened and bubbly. Cook and whisk for 2 minutes more then remove from heat.
  • 8Add Gouda, cheddar, Swiss, and 1/4 cup of the Parmesan cheese, whisking until cheeses are melted and sauce is smooth.
  • 9Add the cheese sauce to cooked pasta and stir to coat. Transfer mixture to prepared dish.
  • 10In a small microwave-safe bowl melt the 1 teaspoon butter.
  • 11Stir in panko and the remaining 1/4 cup Parmesan cheese.
  • 12Sprinkle panko mixture over pasta mixture. Broil 5 to 6 inches from the heat for about 2 minutes or until the top is browned.
