- 16 oz. pasta
- 3 tbsp. unsalted butter
- 1 small yellow onion, finely chopped
- 3 tbsp. all-purpose flour
- 1/2 tsp. kosher salt
- 1/4 tsp. pepper
- 2-1/2 cups milk
- 2 cups Gouda cheese, shredded
- 1 cup sharp cheddar cheese, shredded
- 1 cup Swiss cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 tbsp. butter, melted
- 1/2 cup panko
Directions:
- 1Preheat broiler.
- 2Coat a -quart broiler-safe baking dish with cooking spray and set aside.*
- 3Bring a large pot of lightly salted water to boiling. Add pasta and cook according to package directions. Drain and return to the warm pot.
- 4Meanwhile, in a large saucepan, melt 3 tablespoons butter over medium heat.
- 5Add onion, then cook and stir for 3 minutes.
- 6Stir in flour, kosher salt, and pepper, then add milk all at once.
- 7Cook, whisking constantly, until thickened and bubbly. Cook and whisk for 2 minutes more then remove from heat.
- 8Add Gouda, cheddar, Swiss, and 1/4 cup of the Parmesan cheese, whisking until cheeses are melted and sauce is smooth.
- 9Add the cheese sauce to cooked pasta and stir to coat. Transfer mixture to prepared dish.
- 10In a small microwave-safe bowl melt the 1 teaspoon butter.
- 11Stir in panko and the remaining 1/4 cup Parmesan cheese.
- 12Sprinkle panko mixture over pasta mixture. Broil 5 to 6 inches from the heat for about 2 minutes or until the top is browned.
